Cryo from the Greek word “krýos” means icy cold. Cryo-hops are made by combining liquid nitrogen and hops, creating a more robust hop aroma and taste. We combined cryo-hops and traditional pilsner brewing to make FORM, our finest and newest small-batch German Pilsner. Formed upon Pilsen malt and bolstered by Vienna, the crisp malt presence is sessionable and light, with a touch of honey malt to reform your perception of a Pilsner. True to style of a Franconian Keller Pils, we lagered this beer and left it unfiltered, the ideal environment for our final act: a dose of dry-hopping with Simcoe cryo-hops. Aromatics are bright and floral, melding with flavors of golden dandelion and woodsy pine. FORM is where tradition combines with hyper-fresh.

We used 100% local malt from Deer Creek in Glen Mills, their select Colonial Pilsner for a base with a dash of lightly toasted oat malt and twilight wheat malt. Remember when you got a boo-boo as a kid, and after you got a band-aid, your parents gave you a big glass of milk with some Oreos on the side just begging to be dunked. Well this is it in beer form. “Oreo Scenario” is a chocolate milk stout brewed with double-stuff Oreos. Oh, and if you’re a mint-chocolate-chip fan, we doubled-down and brewed another version of this beer with fresh peppermint, simply called “Mint Oreo Scenario”.

The base is a chewy dessert-like stout with Ghirardelli cacao powder and lactose sugar sprinkled on top. To garnish the glass, we added a grocery cart full of Oreos for a simply nostalgic experience.

Athena is the Greek Goddess of war but displays prudent restraint, which we honor by balancing tart and sweet in this ruby-hued cider. Macintosh apples provide the crisp base for slightly sour Montmorency cherries, discovered by Roman legionnaires in France and planted alongside ancient roads to provide sweet sustenance for travelers. Athena’s Harvest is a glowing pint with notes of black cherry marmalade and orchard-sharp refreshment.

A tart fruit ale reminiscent of an Italian soda with velvety lactose, sweet peach, and passionfruit puree added after fermentation. The kettle souring process that we use calls for an extra curricular fermentation to take place in the brew kettle prior to brew day, where lactose is added, lending a soft biscuity mouth feel and a slightly tart finish to this spritzy gem.
